Ingredients:
1 Romaine lettuce, sliced
1/2 cup blueberries, washed
1 cucumber, peeled and cubed
1 teaspoon dry (or 1/4 cup fresh) parsley leaves
1 pinch salt
1 pinch pepper
1 teaspoon olive oil
Mix all ingredients and serve immediately as a side dish.
Suggestion:
To make this salad into a full meal, add 1/2 cup of walnuts or cooked chicken/turkey breast, cubed.
